I too have had this place on my list. Need to get there soon. As for corned beef hash, have you tried the version at Tre Kronor? It's totally different - chunks of corned beef with lots of rosemary - but it's also made in house. Paired with one of their fresh pastries it's one of my favorite Chicago breakfasts.
I love watching a short-order cook who knows what they’re doing. One of my best diner meals was at a place next to the stockyard in a small Utah town, when my GF and I were visiting Zion National Park. It happened to be Mother’s Day, and the plan was jammed. We ended up with the perfect counter seat, and were able to watch the guy at the ridiculously tiny range and flat top just line up and knock down plate after plate of perfect food. Still the best hash browns I’ve ever had.
It's incredible thinking about it - sometimes a perfect diner meal can topple your memory of a pretty good fine dining one because the cooks just KNOW what they're doing and can actually make it happen. It says a lot about these types of places.
