Dennis is not being a good comment reply guy, so I guess I'm gonna have to do it for him. It's essentially penne ala vodka with sausage and mushrooms, so:
Brown off some italian sausage, breaking it up into bite sized pieces. Set aside.
Saute mushrooms and a chopped onion until deep brown and caramelized. Add some crushed or sliced garlic and cook until fragant.
Deglaze with white wine or vodka. Add some crushed tomatoes, a sprig of rosemary leaves (chopped), and the reserved sausage and cook until fragant and reduced by a third. Add some heavy cream and grated parmesan, season with salt and pepper.
Add to rigatoni or penne, plate, garnish with chopped parsley if desired.
Yeah sorry Robyn, I've been so bad about replying. Too much writing. This eyeball recipe is good (make sure you splash some wine into the mushrooms too). Just use way more cream than you think you would.
